Fresh Baby Corn
Baby corn fresh picked is sweet and crunchy. You can eat it whole, kernels and cob together, add it lightly blanched to salads, it is ideal in soups such as Tom Yum or Short Soup and also perfect when cooked quickly in stir fries .

Fresh Drinking coconuts
Drinking Coconuts also known as Young Coconut are a natural product that is the latest trendy drink in Australia. There are some very good reasons why this product has become so popular.
1. It is Natural - water found inside the coconut has been filtered and purified by the fibres of the coconut tree over the 6 months it has taken to grow and therefore there are no problems with nasties found in other waters or processed drinks2. High level of Electrolytes are found in Fresh Coconut Water - ideal for replacing lost minerals and salts after a hot day or a workout at the gym etc. A much better isotonic drink than the sports drinks on the market that are too high in sugar3. The Water should have a sweet fresh taste and is very thirst quenching4. Drinking Coconuts do not contain cholesterol but does contain raw saturated fat in the soft flesh that is very good for the human body and for muscle gain.
Mondial Trading's brand is known as Cocohuna coconuts and we have normal and certified Organic Coconuts available for sale.
Drinking Coconuts of course are best just drunk fresh out of the fridge. Open the top by using the heal edge of a large knife or cleaver, striking the top of the pyramid 4 or 5 times in a pentagon shape. You will need to use a fair amount of force. Once the 4 or 5 strikes have been made to the top of the coconut you will then be able to lift the 'lid', place a straw in the nut and drink to your hearts content. Another method is using a drill to put a small hole in the top for a straw.
Coconut water is also excellent if used in any dishes that require extra liquid such as slow cooking and curries

Vanilla comes from the vanilla planifola vine, a variety of orchid that produces a long bean that requires manual hand pollination and curing to produce that amazing sweet flavour.
Description:The flavouring comes from the seed pod, or the ‘bean’ of the vanilla plant. The prepared beans are very dark brown, slender, pleated and about 20 cm long. Quality Vanilla beans are tough yet pliable and appear moist. if the bean is dry and hard it is of inferior quality.
Beans are generally cut down the middle length ways to reveal the thousands of tiny black seeds. These seeds contain the active ingredient ‘vanillin’ that produces the characteristic fragrance and is produced during the process of induced fermentation. These pods are called ‘fine vanilla’. Vanilla extract is also available and, if of good quality, is identical in flavour to the pods.Bouquet: highly fragrant and aromaticFlavour: rich, full, aromatic and powerful.
Next to saffron and cardamom, Vanilla is the worlds next most expensive spice. Vanilla is native to Mexico, where it is still grown commercially. Vanilla was used by the Aztecs for flavouring their royal drink xocolatl - a mixture of cocoa beans, vanilla and honey. The Spanish brought vanilla back to Europe in the sixteenth century, after having observed Montezuma drinking the cocoa concoction. Europeans prefer to use the bean, while North Americans usually use the extract.

Substances called “vanilla flavour” don’t contain vanilla at all, being synthesized from eugenol (clove oil), waste paper pulp, coal tar or ‘coumarin’, found in the tonka bean, whose use is forbidden in several countries.
We are often asked if there is a difference in flavour between the different varieties of Vanilla bean. There is big difference between them however unless you live in an area with a superb grocery store or you buy online you will probably only have the one choice.
Madagascar vanilla or the Planifolia variety (the one we sell) is considered by many to be the “definitive” vanilla with stronger flavour and aroma and more 'high notes'. Other varieties are Mexican and Tahitian. It’s said that Mexican vanilla has a deeper, smoother, truer vanilla flavour (it is the place, after all, where vanilla originated). Tahitian is thought by many to be very fruity.
Generally look for vanilla that’s fresh, meaning plump, glossy and pliable . Try to avoid artificial flavourings, I’ll always use a real vanilla bean in a custard or a cream, where the subtle perfumes sing.

Fresh Durian
Fresh Durian are only allowed to be imported into Australia under very specific conditions and as such are generally expensive for the retail consumer.
Durian is well known as the King of Fruits in Asia for its sweet delicate custard like consistancy fruit. It is strong smelling and for some can be difficult to handle due to its strong smell.
With a spiky husk that are generally green or brownish in colour are usually quite large up to 5kg each.
Inside you will find small golden pillows of fruit with the sweet custard flavour. Durian is a great combination of savoury, sweet and creamy all at once.
Durian is a very popular desert in Asia often mixing with coconut cream and sticky rice.
We are able to provide Durian in 250g packs peeled and ready to eat. The Shelf life on this product as it is already peeled is a little limited so it is highly recommended to consume it within a week of arriving into Australia. Of course it should be refrigerated as soon as possible.
